Kid’s birthday party coming up? Look no further than the ultimate intersection where sweet treats meet a party hat. These cookies are practically screaming to join in on the celebrations. And, they’re allergen friendly—no gluten or nuts, and you can use vegan butter for a dairy-free version. Make sure you use the long-rod sprinkles called “jim bits” so the colours don’t bleed into the cookies.  


Ingredients
Preparation
  1. Preheat oven to 350° F. Line Sheet Pan with Sheet Pan Liner.  
  2. Using a stand mixer (with paddle attachment) or hand mixer, beat mix with butter, egg, and vanilla extract on low speed until well combined. Fold in 14 cup sprinkles. 
  3. Scoop dough into 12 balls, about 2 tbsp each. 
  4. Pour remaining 14 cup  sprinkles in a bowl or on a plate. Gently roll or dip the tops and sides of the cookies in the sprinkles. Arrange on pan, spacing 1" apart. 
  5. Bake 12–15 min, or until lightly golden on the edges and set in the middle. Let cool on pan for 5 min. Place cookies on Cooling Racks and cool completely.  
Tips

It’s important to use long, rod-shaped rainbow sprinkles, aka “jimmies” or “jim bits,” for this recipe—they hold up during baking and their colours don't bleed into the cookie dough.
