Ingredients


Makes: 4 servings
  • 1 Tbsp (15 ml) oil
  • 1 medium head cauliflower, cut into large florets
  • 2 potatoes, peeled and cut into 1½” inch pieces
  • 1 onion, finely grated
  • 1-2 Tbsp (15-30 ml) Mango Curry Dip Mix
  • 1 C (250 ml) crushed tomatoes
  • 1 Tbsp (15 ml) tomato paste
  • 1/2 C (125 ml) prepared *broth, warm
  • 1 C (250 ml) frozen peas, optional

Preparation


 
  • Microwave Preparation:
    1. Add oil, cauliflower, potatoes, and onion in a Multipurpose Steamer. Microwave on high for 5 minutes.
    2. Stir in dip mix, crushed tomatoes, tomato paste, and warm broth. Cover andmicrowave on high for 8–10 minutes or until the vegetables are tender. Season,if desired.
    3. Stir in the peas and microwave covered, until the peas are tender, about 2 minutes more.
  • Stovetop Preparation:
    1. In a Fry Pan or Wok & Glass Lid, heat the oil over medium heat.
    2. Add the cauliflower, potatoes, and onion and cook, stirring frequently, until the vegetables start to soften, about 5 minutes.
    3. Add dip mix, crushed tomatoes, tomato paste, and broth. Heat until simmering, reduce the heat to low and cook, covered, until the vegetables are tender, about 15 minutes. Season, if desired.
    4. Stir in the peas and cook, covered, until the peas are tender, about 2 minutes more.
