Ingredients


Makes: 1 serving
  • 1/2 C (125 ml) peeled and grated potato
  • 1/2 C (125 ml) grated zucchini, or ¼ C (60 ml) onion
  • 1 Tbsp (15 ml) Sun-Kissed Tomato Dip Mix
  • 1 egg
  • 1 tsp (5 ml) butter

Preparation


 
  • With Omelet Maker:
  • Combine first four ingredients. Arrange evenly in a lightly oiled Omelet Maker. Close lid and microwave on high for 5 minutes.
  • Spread butter along the edges of the hash mixture, and microwave 1 minute further.
  • Loosen with a Dip & Spreader and flip onto a plate.
  • With a Frying Pan:
  • Combine first four ingredients.
  • Melt butter in a Fry Pan on medium heat. Once the butter is bubbling, add the hash mixture and make a loose, flat layer.
  • Cook on each side for 5–6 minutes until golden brown.
  • Slide onto a plate and serve.
